German Chocolate Cake Energy Balls
These rich, chewy energy balls are a healthier spin on one of my all-time favorite desserts. They are filled with healthy fats, protein, and antioxidants. Plus, they are naturally sweetened with mineral-rich medjool dates. For an extra boost, I add some naturally energizing maca powder. German chocolate cake energy balls are the perfect bite-sized afternoon pick-me-up.
Prep Time – 20 minutes + 2 hours to harden in refrigerator
Servings – makes 12-15 balls
Ingredients :
1 cup medjool dates (about 8 large)
1/2 cup pecans
2 tbsp shredded unsweetened coconut
2 tbsp almond butter
1 tbsp coconut oil, melted
1 tbsp raw cocao powder (like this one)
1 tbsp maca powder (optional)
pinch of sea salt
Directions:
Remove the pits from the dates and add them to the food processor along with almond butter and coconut oil. Process until a paste forms.
Add the remaining ingredients and pulse until everything is well incorporated and the mixture has a crumb-like texture.
Roll mixture into small balls and place on a parchment-lined tray.
Refrigerate for at least 2 hours before serving.
Best served cold. Balls will keep in the fridge for 7-10 days.
