German Chocolate Cake Energy Balls

These rich, chewy energy balls are a healthier spin on one of my all-time favorite desserts. They are filled with healthy fats, protein, and antioxidants. Plus, they are naturally sweetened with mineral-rich medjool dates. For an extra boost, I add some naturally energizing maca powder. German chocolate cake energy balls are the perfect bite-sized afternoon pick-me-up.

Prep Time – 20 minutes + 2 hours to harden in refrigerator
Servings – makes 12-15 balls

Ingredients :

  • 1 cup medjool dates (about 8 large)

  • 1/2 cup pecans

  • 2 tbsp shredded unsweetened coconut

  • 2 tbsp almond butter

  • 1 tbsp coconut oil, melted

  • 1 tbsp raw cocao powder (like this one)

  • 1 tbsp maca powder (optional)

  • pinch of sea salt

Directions:

  1. Remove the pits from the dates and add them to the food processor along with almond butter and coconut oil. Process until a paste forms.

  2. Add the remaining ingredients and pulse until everything is well incorporated and the mixture has a crumb-like texture.

  3. Roll mixture into small balls and place on a parchment-lined tray.

  4. Refrigerate for at least 2 hours before serving.

  5. Best served cold. Balls will keep in the fridge for 7-10 days.
