Thai Turkey Meatballs with Creamy Peanut Sauce

These Thai-inspired meatballs are the weeknight dinner you didn't know you were missing. Tender, oven-baked turkey meatballs seasoned with red curry paste, ginger, and garlic get nestled into a rich, creamy coconut sauce with a subtle kick. It all comes together in 40 minutes and pairs beautifully with rice or noodles and your favorite steamed veggies — making it an easy, wholesome meal the whole family will love.

Servings – Makes about 30 medium meatballs
Ingredients
For the Meatballs:
2 lbs organic ground turkey
1 pasture-raised egg
1 cup gluten-free cracker crumbs (I use these Simple Mills seed crackers and grind them in my NutriBullet)
3 tbsp coconut aminos sauce
½ - 1 tbsp Thai red curry paste (adjust based on spice preference)
1 tbsp minced fresh garlic
1 tbsp minced fresh ginger
Avocado oil spray
For the Creamy Peanut Sauce:
1-2 tbsp avocado oil
½ red bell pepper, diced
1 tbsp minced garlic
½ tbsp minced ginger
2 tbsp coconut aminos sauce
1 ½ tbsp sambal oelek chili paste
1 cup full-fat coconut milk
½ - 1 cup chicken bone broth
1 ½ tbsp creamy peanut butter
Directions:
Preheat oven to 400 degrees Farenheight.
Line two baking sheets with unbleached parchment paper and set aside.
In a large bowl, combine all the meatball ingredients and mix until well combined.
Roll the meatball mixture into balls of desired size and place them on the parchment-lined baking sheets. Spray the meatballs with avocado oil spray.
Bake the meatballs for 14-18 minutes or until internal temperature has reached 160 degrees Fahrenheit. Remove from oven.
While meatballs are cooking, add avocado oil and diced red peppers to a large skillet and sauté for 1-2 minutes over medium heat. Add the garlic and ginger, then continue sautéing until fragrant (about 1 minute). Add coconut milk, sambal oelek, peanut butter and coconut aminos sauce to the pan. Stir with a wooden spoon as the sauce thickens and comes together. Add the chicken bone broth to thin the sauce to the desired consistency. Taste and adjust seasonings as needed.
Add the cooked meatballs to the sauce and allow to everything to simmer on low heat for several minutes. Serve with your favorite steamed veggies and rice or noodles.
