Turkey Apple Breakfast Bites

These turkey bites are the perfect make-ahead morning staple — savory, lightly sweet, and packed with protein to keep you fueled. Made with simple, wholesome ingredients, they're gluten-free, dairy-free, freezer-friendly, and endlessly snackable.
Prep Time – 20 minutes
Cook Time – 15 minutes
Servings – Makes about 40 Bites
Ingredients:
2 lbs organic ground turkey
1 cup grated pink lady apple
1/2 cup grated onion
1/2 cup GF oat flour
1 egg
1 tbsp maple syrup
2 tsp Italian seasoning
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt
Directions:
Preheat oven to 400 degrees F.
Line two baking sheets with unbleached parchment paper and spray or brush with a little avocado oil.
Combine all ingredients in a large bowl and mix until well incorporated.
Form the mixture into 1-inch balls. I like to use a mini ice cream scoop for this. Place the balls onto the parchment-lined baking sheet. Spray or drizzle the balls with a little more avocado oil and gently flatten them into patties using the palm of your hand.
Bake for 15 minutes.
Remove from oven and allow to cool before placing in glass storage dishes.
Store turkey bites in the fridge for up to 5 days or freeze. Reheat bites in a pan with a little avocado oil to crisp up the sides.
